Left hanging on the vine until mid March, hand picked at around 13.8 Be, cooled over night, then pressed into separate sections. Wild fermentation the wine is racked off it's gross lees then each section aged individually in neutral puncheons.
Tasting Notes:
A smashing, true to type example of a traditional textural complex Marsanne. Jasmine, apple blossom, lemon, grapefruit rind and nectarine scents which lead to hints of lemon and grapefruit rind on the palate with nuttiness to flesh it out. Strong acid line and a very clean finish.
Cellaring:
This wine is drinking beautifully now, however, put it down and be rewarded over the next five to ten years as the colour deepens and the flavours develop.
Food Suggestions:
While this wine is delightful on its own try pairing with shell fish, a plate of steamed scallops or maybe freshly caught yabbies.
